1UZFE and mud, samd, water

how do the 1UZFE's deal with use in mud, water, sand, etc offroad?

Just like any other fuel injected engine.

The crank angle sensor operates under water.

The main concern is driving into water deep enough to effect the distributors. Would be around 4' or 1200mm deep in my 4by
