this is a dumb question:

I am about ready to start fitting my 1uz into
my car, and I have no idea how to accurately take measurements for
custom engine mounts and angle for the differential.

do I just dangle the engine in the car on the hoist and use a ruler?

how do you guys do it?

Pretty much dangle it, if your transmission is in it helps with locating. Put your isolater on the chassis (and a plate on the isolator if you have the square type) and work out how long you need the plate to be on the engine block based on the isolator position. Cut and bolt the plate to the block, measure remaining distance between isolator and block plate and cut two more plates to bridge the gap (drill if using the round type).

Tack weld one side, make sure engine is level/centred/desired postion then repeat for other side.

If you need to mount motor and trans you're better off jigging the whole lot in place to hold it strongly in position, then do the mounts.

Don't try and make the mounts out of the car if you only have a ruler. Jig it up or make them with the engine in position.

couple of pics of my first ever attempt down the page:
