Why does some cars running on V8, V12 engines create a fluttering exhaust noise while others don't?

Header/manifold design has a lot to do with it. Older V12 Ferraris from the 90's had a 2 x 3:1 header design on each bank which produced a deeper exhaust note. Newer Ferraris have a 6:1 design on each bank, which produces an entirely different, raspy sound.

I didn't even know that. Thanks for the clarification.
